Prawn Fettucine
Serves 4
Ingredients:
- 340g (12oz) of Large Cooked and Peeled Prawns
- 340g (12oz) Green Fettuccini or Tagliatelle
- 1 x 15ml spoon (1 tablespoon) Vegetable Oil
- 1 Medium Onion, Finely Chopped
- 1 x 200g Can of Chopped Tomatoes
- 125ml (4 fl oz) Dry White Wine
- 175ml (6 fl oz) Fish or Chicken Stock
- 200ml (7 fl oz) Créme Fraîche
- 4 x 15ml spoon (4 tablespoons) Finely Chopped Fresh Basil
Method:
- Cook the pasta according to instructions and keep warm.
- Meanwhile heat the oil in a pan and cook the onion until soft. Add the tomatoes and cook for 1 minute.
- Pour in the wine and stock. Simmer for 5 minutes. Stir in the crème fraîche and heat gently.
- Add prawns to the sauce and cook for 1 minute or until heated through. Serve on a bed of pasta.
